Tessa’s Vanilla Cake Recipe

Ingredients:

Cake

1 1/2 sticks (3/4 cup) butter softened to room temperature

1 1/2 cups superfine sugar

4 eggs at room temperature

2 tablespoons vanilla extract

3 cups all-purpose flour

1/2 teaspoon baking soda

2 teaspoons baking powder

1 1/2 cups buttermilk at room temperature

Vanilla Frosting

2 sticks (1 cup) butter

2 tablespoons milk

4 cups confectioners’ sugar sifted

4 teaspoons vanilla extract

Preparation:

Preheat the oven to 350 degrees Fahrenheit.

Butter and line the base of 2 x 9 inch round cake pans.

Beat the butter and superfine sugar together until smooth and creamy.

Add the eggs one at a time and mix until well-combined.

Add the vanilla extract.

In another bowl sift together the all-purpose flour, baking powder and baking soda.

Gradually add the dry ingredients, alternating with the buttermilk, to the butter mixture.

Divide the mixture between the prepared cake pans.

Bake in the pre-heated oven for 20 – 25 minutes, until a skewer inserted into the middle comes out clean.

Leave the cakes to cool in the cake pans for about 10 minutes and then remove from the pans and cool on a wire rack. Once cooled remove parchment paper from the base of the cakes.

To make the vanilla frosting, in a large bowl beat the butter until creamy. Gradually add the sifted confectioners’ sugar and mix until well combined. Mix in the milk and the vanilla extract.

Top one of the cakes with the vanilla frosting and place the other on top. Spread the frosting over the top and sides of the cake.
